Depends on the theater. I'm sure some items go to employees who request them. My local theater often sets up a booth selling the posters for about ten bucks each, but the selection is not always the best. Occasionally they'll run sealed bid auctions for larger pieces like a 3D Silver Surfer or the Simpson's on their couch. Others they keep - my local theater still has a 3D Kung Fu Panda it uses as a decoration in it's kid's party area.
Films are never sold or available for sale. For that matter, most movies are no longer shown on film, but digitally. They are returned to the distributor. Unless you turn to piracy, you can't legally buy a film for private use until it's on DVD .
